
Tasty muesli and yoghurt with dried cherries
Thinking of what my first post should be is a mix of exciting and scary. I want to share my wheat free recipes after struggling for the first few years of being told that I was wheat intolerant, for me eating a diet high in processed foods just wasn’t working. So I stopped eating ‘gluten free’ food from the supermarkets, went back to basics and started finding something that worked for me. For me this was meat, vegetables, fruit and nuts, foods with little processing.
I believe that everyone has to find what works for them and what works for me won’t be exactly what works for you, everyone has to listen to their own body. That said, I don’t live in a wheat free house as it would be unfair of me to expect others to stop eating wheat just because my body doesn’t like it, I’m more than happy to put a slice of bread into the toaster, and let’s be honest everyone has to make their own decision on what they eat, if your body can tolerate wheat then it is your choice to eat it whenever you want, just not in the meals made by me.
The recipe I am going to share is my muesli or granola, the nuts and seeds make a great snack, it’s my go to for morning tea, I eat it by itself or with yoghurt and fruit – my favourites are berries, mango, or dried cherries. I use a dehydrator to make my muesli and keep it in the fridge.

- 1 cup almonds
- ½ cup pecans
- ¼ macadamia
- ¼ hazelnut
- ¼ cup walnuts
- ¼ sunflower seeds
- ¼ pepitas
- ¼ cup cashews
- 1 tablespoon cinnamon
- ⅓ cup shredded coconut
- 1 tablespoon pure vanilla extract
- ⅔ cup honey
- 2 tablespoons macadamia oil (can substitute with coconut oil)
- Cover the nuts with water and a pinch of salt overnight, minimum of 12 hours 16-20 is better
- Rinse and pat dry with a dishtowel.
- Put into a food processor and process until nuts are the appropriate size, about the size of oats, I don’t mind if a few nuts are larger so do what suits you.
- Add the cinnamon, vanilla, honey and macadamia oil and pulse until combined.
- Add the coconut and stir.
- Put baking paper on three of the dehydrator tray and split the mixture into thirds, flattening the mixture.
- Put on medium high and cook for a minimum of 16-20 hours or until the mixture is starting to look ready, turn a couple of times during the process.
Rinse and pat dry with a dishtowel
Put into a food processor and process until nuts are the appropriate size, about the size of oats, I don’t mind if a few nuts are larger so do what suits you.
